High-protein Cottage Cheese Pancakes

Cottage cheese makes these pancakes tender, lightly tangy, and substantial enough for a proper breakfast. Mara turns them only once; needless flipping is kitchen fidgeting.

Ingredients

  • 1/3 cup all-purpose flour
  • 1/2 teaspoons baking soda
  • 1 cup low-fat cottage cheese
  • 1/2 tablespoon canola oil
  • 3 eggs, lightly beaten

Directions

    Stir together flour and baking soda in a small bowl. Stir together remaining ingredients in a large bowl.

    Next, pour flour mixture into cottage cheese mixture and stir until just incorporated. Heat a large skillet over medium heat, coat with nonstick spray.

    Next, pour 1/3-cup portions of batter onto skillet and cook until bubbles appear on the surface. Next, flip and cook on the other side until brown.
