Sweet and Sour Pork
Tender pork, pineapple, and peppers meet in a glossy sweet-and-sour skillet sauce. Bramble keeps the pineapple counted after Pip developed an interest in tropical provisions.

Ingredients
- Cooking spray
- 1 pound lean pork tenderloin, cut into thin strips
- 1 15-ounce canned, unsweetened pineapple chunks
- 1/2 cup water
- 1/4 cup Splenda brown sugar blend
- 2 tablespoons cornstarch
- 1/2 teaspoons table salt
- 1 tablespoon low-sodium soy sauce
- 2 medium green peppers, sliced (as tolerated)
- 1 small onion, sliced (as tolerated)
- 3 cups cooked brown rice
- 1/3 cup wine vinegar

Heat a nonstick skillet coated with nonstick spray over medium-high heat. Stir in pork and cook until golden brown.

Take from skillet and set aside. Next, drain any remaining fat from skillet.

Next, drain pineapple chunks, reserving juice; set aside. Stir together water, vinegar, sugar, cornstarch, salt, soy sauce, and reserved pineapple juice in a small bowl.

Stir in to skillet and cook until sauce is thickened, about 2 minutes. Stir in pork to skillet and cook on low heat until meat is tender, with an occasional stir, for about 30 minutes.

Stir in peppers, onion, and pineapple chunks and cook for an additional 5 minutes. Next, serve over rice.
