Tzatziki Greek Yogurt and Cucumber Sauce
Cool cucumber, lemon, garlic, and Greek yogurt blend into a bright, creamy sauce for chicken, fish, or vegetables. Bramble calls it summer in a small bowl.

Ingredients
- 3 cups plain nonfat Greek yogurt
- 3 tablespoons lemon juice
- 1 garlic clove, chopped
- 2 medium cucumbers, peeled, seeded and diced
- 1 tablespoon salt
- 1 tablespoon finely chopped dill
- Salt and pepper to taste

Next, peel cucumbers and cut in half lengthwise. Next, take a small spoon and scrape out and discard the seeds.

Next, dice cucumbers and put them in a colander with 1 tablespoon salt. Next, let stand for 30 minutes to draw out the water.

Next, drain well and wipe dry cucumber pieces with paper towel. Next, in a food processor with a steel blade, add cucumbers, garlic, lemon juice, dill, and a few grinds of black pepper.

Next, process until well blended. Next, stir the mixture into the yogurt.

Next, taste before adding any extra salt, then salt, if needed. Arrange in refrigerator for at least two hours before serving so flavors can blend (do not skimp on the resting time).

Next, drain off any excess water and stir before serving.
