Creamy Mashed Cauliflower

A familiar soft side with garlic, Parmesan, and just enough butter to round it out. It is not meant to impersonate potatoes; it is simply cauliflower prepared well. Blend completely smooth for a Soft Foods texture and follow your own plan if garlic, dairy, or vegetable fiber needs to wait.

Ingredients

  • 1 large head cauliflower, cut into small florets
  • 3 garlic cloves, peeled
  • 1/4 cup unsweetened low-fat milk, plus more only if needed
  • 1/4 cup finely grated Parmesan cheese
  • 1 tablespoon unsalted butter
  • Black pepper, to taste and optional

Directions

    Place the cauliflower and garlic in a steamer basket over simmering water. Cover and steam for 12 to 15 minutes, until the cauliflower crushes easily with a fork.

    Transfer the hot cauliflower and garlic to a food processor. Add the milk, Parmesan, butter, and optional black pepper.

    Blend until completely smooth, stopping to scrape the bowl. Add extra milk one teaspoon at a time only if needed for a soft, moist consistency.

    Measure the finished mash and divide it into six equal portions of approximately one-half cup each. If the batch yields a different volume, record the actual portion size rather than overfilling servings.

    Refrigerate leftovers in a shallow covered container within 2 hours and use within 3 to 4 days. Reheat only the portion needed until steaming hot, stirring for even heating.
