Ingredients

  • 4 slices reduced-calorie bread, crusts removed
  • 1 1/2 cups egg substitute
  • 1 1/2 cups skim milk
  • 4 slices cooked turkey bacon, crumbled
  • 1/4 cup shredded reduced-fat cheddar cheese, divided
  • 1/4 cup shredded reduced-fat Swiss cheese, divided
  • 1/2 cup sliced mushrooms
  • 1/4 teaspoon seasoned salt
  • 1/2 cup frozen hash brown potatoes, thawed

Directions

    Arrange the bread in a lightly greased 9-inch square baking dish, overlapping slightly.

    Whisk the egg substitute, milk, turkey bacon, 2 tablespoons each cheddar and Swiss, mushrooms, and seasoned salt.
