Good Morning Casserole
Egg, turkey bacon, two cheeses, mushrooms, and potatoes settle overnight into a tender breakfast bake. Mara assembles it early so morning has fewer opportunities to misbehave.

Ingredients
- 4 slices reduced-calorie bread, crusts removed
- 1 1/2 cups egg substitute
- 1 1/2 cups skim milk
- 4 slices cooked turkey bacon, crumbled
- 1/4 cup shredded reduced-fat cheddar cheese, divided
- 1/4 cup shredded reduced-fat Swiss cheese, divided
- 1/2 cup sliced mushrooms
- 1/4 teaspoon seasoned salt
- 1/2 cup frozen hash brown potatoes, thawed

Arrange the bread in a lightly greased 9-inch square baking dish, overlapping slightly.

Whisk the egg substitute, milk, turkey bacon, 2 tablespoons each cheddar and Swiss, mushrooms, and seasoned salt.

Pour the mixture over the bread, then scatter the potatoes and remaining cheese on top.

Cover and refrigerate overnight.

Heat the oven to 350 °F and bake uncovered for 40 to 45 minutes, until lightly browned and the center reaches 160 °F.
