Silken tofu and chocolate pudding blend into a cool, smooth dessert with a gentle cocoa finish. Bramble calls it moonlit because “tofu pudding” lacked sufficient ceremony.

Ingredients

  • 1 envelope unflavored gelatin
  • 1/4 cup hot water
  • 1 1.4-ounce package sugar-free, fat-free chocolate fudge instant pudding mix
  • 1 cup cold skim milk
  • 16 ounces silken tofu, drained
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon unsweetened cocoa powder, optional
  • 1/4 teaspoon peppermint extract, optional

Directions

    Stir the gelatin into the hot water and set it aside until thickened.

    Whisk the cold milk and pudding mix in a medium bowl until combined.

    Add the silken tofu, vanilla, and optional cocoa or peppermint; whisk briefly to break up the tofu.

    Blend until completely smooth, pausing to scrape the blender as needed.

    Add the softened gelatin gradually and blend again until evenly incorporated.

    Divide among eight small bowls, cover, and chill for at least 30 minutes, until softly set.
