Lemon Dijon Salmon

Lemon, Dijon, and garlic sharpen rich salmon without burying it. Mara bakes it only until flaky, because overcooked fish is not a character-building exercise.

Ingredients

  • 1 1/2 pounds wild salmon
  • 1 tablespoon olive oil
  • 1 tablespoon Dijon mustard
  • 1 garlic clove
  • 1 tablespoon lemon juice plus slices
  • 1 teaspoon fresh thyme or 1/2 teaspoons dried
  • Salt and pepper

Directions

    Heat oven to 400°F.

    Mix oil, mustard, garlic, lemon, and thyme.

    Season salmon; add half the sauce and lemon slices.

    Bake 8–10 minutes, add remaining sauce, and bake 3–5 more until flaky.
