Edamame Hummus

Edamame, tahini, lemon, and gentle spice blend into a bright green, protein-bearing hummus. Bramble insists the color is proof that vegetables enjoy pageantry.

Ingredients

  • 1 12-ounce package shelled edamame, fresh or frozen
  • 3 large garlic cloves
  • 1/4 cup water, plus more as needed
  • 1/4 cup tahini
  • Finely grated zest and juice of 1 lemon
  • 3/4 teaspoon kosher salt
  • 1/2 teaspoon ground cumin
  • 1 tablespoon chopped fresh cilantro
  • Pinch of red pepper flakes, optional
  • 1 tablespoon chopped flat-leaf parsley
  • 3 tablespoons extra-virgin olive oil

Directions

    Boil the edamame and whole garlic cloves for 4 minutes, then drain and rinse under cool water.

    Add the edamame, garlic, water, tahini, lemon zest and juice, salt, cumin, cilantro, red pepper flakes, and parsley to a food processor.

    Process until smooth, stopping to scrape the bowl.

    With the processor running, add the olive oil slowly. Continue blending until no pieces remain, adding water 1 teaspoon at a time if your approved texture requires a looser purée.
