Egg, Swiss cheese, hummus, crisp vegetables, and a half pita make a practical five-day breakfast box. Mara recommends eating the protein first and treating the container as storage, not a challenge.

Ingredients

  • 5 mini cucumbers, peeled if needed
  • 1 1/4 cups cherry tomatoes
  • 5 hard-cooked eggs, peeled
  • 2 1/2 small 100% whole-wheat pitas
  • 5 slices low-fat Swiss cheese, about 3/4 ounce each
  • 1 1/4 cups prepared hummus

Directions

    Prepare five small lidded containers.

    Place one egg, one cucumber, and 1/4 cup tomatoes in each container.

    Cut the pitas in half and add one half to each box with one slice of Swiss cheese and 1/4 cup hummus.

    Cover and refrigerate promptly for up to 5 days.

    At serving time, begin with the egg, cheese, and hummus. Eat only the amount and textures included in your approved stage plan.
