Bramble’s Banana-Quinoa Trail Bars
Quinoa Banana Breakfast Bars
Banana, quinoa, milk, and nut butter bake into six moist breakfast bars with a restrained scattering of chocolate. Bramble regards one measured bar as provisions; three become an expedition.

Ingredients
- 1 cup dry quinoa, rinsed and drained very well
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 1/3 cups mashed ripe banana
- 1 cup skim milk or another care-team-approved milk
- 2 tablespoons smooth peanut butter or other smooth nut butter
- 1 teaspoon vanilla extract
- 1/4 cup dark chocolate chips, optional
Directions

Heat the oven to 350 °F and coat an 8-inch loaf pan with nonstick spray.

Stir the quinoa, cinnamon, salt, and optional chocolate chips together in a bowl.

Add the mashed banana, milk, nut butter, and vanilla; mix until evenly combined.

Spread the mixture in the prepared pan and bake for 28 minutes.

Turn off the oven without opening the door and leave the pan inside for 25 minutes more.

Cool completely, then cut into six small bars. Refrigerate leftovers.
