Ingredients

  • 1 1/2 pounds chicken breast
  • 1/4 cup oil
  • 1/4 cup lime juice
  • 2 teaspoons garlic
  • 2 teaspoons cumin
  • 1/2 teaspoons paprika
  • 1 1/4 teaspoon chili powder
  • Salt and pepper
  • 1 1/2 cups corn
  • 1 avocado
  • 1/2 bunch cilantro
  • 12 small tortillas

Directions

    Whisk together the oil, lime juice, garlic, cumin, paprika, chili powder, salt, and pepper; reserve 3–4 tablespoons before adding raw chicken.

    Halve the chicken and marinate for 45 minutes.

    Preheat the oven to 425°F.

    Mix the corn, avocado, cilantro, and reserved clean marinade.

    Bake the chicken for 12–15 minutes, until it reaches 165°F.

    Rest and chop the chicken.
