Bramble’s Golden-Kettle Cheese Sauce
Smooth Protein Cheese Sauce
Cottage cheese and sharp cheddar blend into a smooth, warm sauce with enough protein to pull its own little cart. Bramble keeps the heat low; scorched cheese remembers a grudge.

Ingredients
- 1 cup low-fat cottage cheese
- 1/2 cup reduced-fat sharp cheddar cheese, finely shredded
- 1/4 cup skim milk or care-team-approved high-protein milk
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Pinch of smoked paprika, optional
- 1 to 3 tablespoons additional milk, as needed
Directions

Blend the cottage cheese, cheddar, 1/4 cup milk, garlic powder, onion powder, and optional paprika until completely smooth.

Pour the mixture into a small saucepan and set it over low heat.

Stir constantly for 3 to 5 minutes, just until the cheddar melts and the sauce is warm and cohesive. Do not boil.

Add more milk 1 tablespoon at a time if a thinner sauce is needed.

Serve warm and refrigerate leftovers promptly for up to 3 days. Reheat gently.
