Mara’s Wayfarer Turkey Meatballs
Turkey Meatballs and Zoodles
Tender turkey meatballs sit over quickly softened zucchini noodles. Mara considers three properly cooked meatballs more useful than a cauldron of ambitious intentions.

Ingredients
- 1 pound lean ground turkey
- 1/3 cup whole-wheat breadcrumbs
- 1 large egg, beaten
- 1 small onion, finely diced
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/4 cup reduced-fat grated Parmesan cheese
- 2 medium zucchini, spiralized
- 1/2 cup low-sugar smooth marinara sauce, optional
Directions

Heat the oven to 400 °F and line a rimmed baking sheet with parchment.

Mix the turkey, breadcrumbs, egg, onion, salt, pepper, garlic powder, and Parmesan just until combined.

Form 15 small meatballs of even size and arrange them on the sheet.

Bake for 20 to 25 minutes, until the centers reach 165 °F.

Meanwhile, cook the zucchini noodles in a nonstick skillet over medium heat for about 3 minutes, until tender but not watery.

Serve three meatballs with a small amount of zoodles and optional warmed marinara.
