Bramble’s Orangeleaf Cod

Orange-Avocado Cod

Lean cod receives one bright orange bite and a thin slice of avocado. Bramble believes garnish should improve supper without beginning a parade.

Ingredients

  • 1 1/2 pounds fresh cod fillet, cut into 4 pieces
  • 1 teaspoon canola or avocado oil
  • 1/4 ripe avocado, cut into 4 thin slices
  • 4 small orange segments
  • Garlic powder, lemon pepper, and salt, as directed

Directions

    Pat the cod dry and season both sides lightly with garlic powder, lemon pepper, and salt.

    Warm the oil in a nonstick skillet over medium-high heat until shimmering.

    Add the cod and cook for 4 to 5 minutes, until the lower edges turn opaque and lightly golden.

    Turn carefully and cook another 4 to 5 minutes, until the center reaches 145 °F and flakes easily.
