Turkey Lentil Protein Soup

Turkey, soft lentils, carrots, and spinach make a thick little bowl that travels well. Mara mashes anything that still appears inclined to argue with a spoon.

Ingredients

  • 12 ounces extra-lean ground turkey
  • 1 teaspoon olive oil
  • 1 cup cooked red or brown lentils, very soft
  • 1 cup carrots, cooked until very soft and finely chopped
  • 1 cup spinach, cooked and finely chopped
  • 2 1/2 cups low-sodium chicken or vegetable broth
  • 1/2 teaspoon paprika
  • Salt and black pepper, as directed

Directions

    Warm the olive oil in a saucepan over medium heat. Add the turkey and cook, breaking it into very fine crumbles, until it reaches 165 °F.

    Add the lentils, carrots, spinach, broth, and paprika.

    Bring to a gentle simmer and cook for 15 to 20 minutes, stirring occasionally, until thick and very tender.

    Lightly mash the soup for a softer consistency if needed for your approved stage.

    Divide into four small servings and cool to a comfortable temperature.
