Lean Barbecue Meatloaf

Lean beef, Parmesan, and a restrained barbecue glaze make a compact comfort-food supper. Mara lets it rest before cutting because even meatloaf deserves five quiet minutes.

Ingredients

  • 1 pound 93%-lean ground beef
  • 1/2 cup finely grated reduced-fat Parmesan cheese
  • 1/2 cup low-sugar barbecue sauce, divided
  • 1 large egg, beaten
  • 1/2 cup onion, very finely chopped
  • 1/4 teaspoon liquid smoke, optional
  • 1/2 teaspoon salt-free grill seasoning, optional

Directions

    Heat the oven to 375 °F. Lightly coat a small loaf pan with nonstick spray.

    Mix the beef, Parmesan, 1/4 cup barbecue sauce, egg, onion, and optional seasonings just until combined.

    Shape the mixture in the pan without packing it tightly.

    Bake for about 45 minutes, until the center reaches 160 °F.

    Brush with the remaining barbecue sauce and return to the oven for 3 minutes.
