Chilled Cucumber Shrimp Soup
Cucumber keeps this protein-rich shrimp soup cool and light. Shellfish, cucumber, and dairy require individual clearance; process until completely smooth, and move it to an earlier texture only if your own care team specifically approves.

Ingredients
- 2 cups fat-free high-protein milk
- 1/2 teaspoon dry mustard
- 1/2 pound fully cooked peeled and deveined shrimp, tails removed
- 1/2 cup peeled, seeded, finely chopped cucumber
- 1 tablespoon chopped chives, optional and only when tolerated
- Pinch of salt and black pepper, optional

Check every shrimp and remove all shell and tail pieces.

Add the milk, mustard, shrimp, cucumber, and any approved seasonings to a food processor.

Process until completely smooth, stopping to scrape the bowl several times.
