A single soft egg meal for days when the grand kitchen expedition is not happening. Use only when eggs, tender vegetables, and cheese are cleared; cook until safe but keep the curds moist rather than rubbery.

Ingredients
- 1 large egg
- 1 tablespoon very finely diced bell pepper, onion, or mushroom
- 1 tablespoon finely chopped baby spinach
- 1 tablespoon shredded reduced-fat cheese
- Nonstick cooking spray

Lightly coat a microwave-safe mug with nonstick spray.

Beat the egg in the mug, then stir in the finely cut vegetables and cheese.
