Lime-Spiced Grilled Shrimp

Lime and a controlled spark of cayenne brighten a lean shellfish supper. Shrimp can become tough quickly; use only when regular foods and shellfish are cleared, cook just through, and chew each bite thoroughly.

Ingredients

  • 1 pound large shrimp, peeled and deveined with tails removed
  • 1 tablespoon olive oil
  • 2 teaspoons salt-free seafood seasoning
  • Pinch of cayenne, optional and only when tolerated
  • Juice and finely grated zest of 1 lime

Directions

    Pat the shrimp dry and check that every shell and tail piece has been removed.

    Toss with olive oil, seafood seasoning, optional cayenne, lime zest, and half the juice.

    Heat a grill or grill pan to medium-high. Cook the shrimp for about 2 minutes per side, just until opaque and 145°F / 63°C.

    Remove promptly so the shrimp remain moist. Add the remaining lime juice.

    Divide into six servings. Cut into small bites if needed, chew thoroughly, and follow your care team's serving guidance.
