Smooth Black Bean Dip

Grit was asked to grind the beans smooth. No one clearly explained that this did not make him the recipe’s author, and by the time Mara noticed, he had already signed the page. Be mindful of bean, salsa, citrus, garlic, and spice tolerance.

Ingredients

  • 1 can (15 ounces) no-salt-added black beans, drained and rinsed
  • 1/2 cup mild salsa with no added sugar
  • 2 garlic cloves, minced
  • 1 teaspoon fresh lime juice
  • 1/2 teaspoon ground cumin
  • 2 tablespoons cilantro leaves, optional and only when tolerated
  • Water or unsalted broth, as needed

Directions

    Put the beans, salsa, garlic, lime juice, cumin, and optional cilantro in a food processor.

    Process for 1 to 2 minutes, scraping the bowl, until completely smooth.

    Add water or unsalted broth 1 teaspoon at a time only if needed for the texture your care team approved.

    For a purée-stage serving, press through a fine-mesh strainer and discard every skin, seed, and herb particle.

    Measure a 1/4-cup serving and refrigerate leftovers promptly.
