Ingredients
- 1 package (0.3 ounce/8 g) Jell-O Zero Sugar Strawberry gelatin mix
- 1/2 cup boiling water
- 2 cups (476 g) FAGE Total 0% plain Greek yogurt
- 1 cup (220 g) Good Culture 2% low-fat cottage cheese
- 1/2 cup (76 g) strawberries, finely chopped or mashed
- 1/2 teaspoon vanilla extract
- 1 cup (72 g) Cool Whip Zero Sugar whipped topping, thawed

Whisk the gelatin into the boiling water for 2 minutes, until every granule is dissolved. Cool for about 10 minutes, until warm but no longer steaming; do not let it set.

Blend the Greek yogurt and cottage cheese until completely smooth, with no visible curds.

With the blender running on low, slowly add the warm gelatin mixture and vanilla; blend only until uniform.

Fold in the strawberries, then fold in the whipped topping. Divide evenly among eight small covered cups.

Chill for at least 2 hours, until softly set. Measure one portion, eat slowly, and stop at your care team’s fullness signal. Keep refrigerated and use within 3 days.
