Strawberry Cheesecake Protein Cloud

This is the protein-bearing cousin of the existing Cloudlight Gelatin Whip, not the same recipe wearing a berry-colored cloak. This is a Regular Foods / after recovery recipe; use it only when your care team has cleared dairy, gelatin, strawberries, and the sweeteners in the selected products.

Ingredients

  • 1 package (0.3 ounce/8 g) Jell-O Zero Sugar Strawberry gelatin mix
  • 1/2 cup boiling water
  • 2 cups (476 g) FAGE Total 0% plain Greek yogurt
  • 1 cup (220 g) Good Culture 2% low-fat cottage cheese
  • 1/2 cup (76 g) strawberries, finely chopped or mashed
  • 1/2 teaspoon vanilla extract
  • 1 cup (72 g) Cool Whip Zero Sugar whipped topping, thawed

Directions

  1. 1

Whisk the gelatin into the boiling water for 2 minutes, until every granule is dissolved. Cool for about 10 minutes, until warm but no longer steaming; do not let it set.

  2. 2

Blend the Greek yogurt and cottage cheese until completely smooth, with no visible curds.

  3. 3

With the blender running on low, slowly add the warm gelatin mixture and vanilla; blend only until uniform.

  4. 4

Fold in the strawberries, then fold in the whipped topping. Divide evenly among eight small covered cups.

  5. 5

Chill for at least 2 hours, until softly set. Measure one portion, eat slowly, and stop at your care team’s fullness signal. Keep refrigerated and use within 3 days.
