Mallow's Berry-Ricotta Dawn Cup
Ricotta Berry Breakfast Cup
A small cloud of ricotta with a spoonful of smooth berry color. Use only when your care team has cleared dairy and cooked fruit; strain out every berry seed and skin, and move this to a later stage if your own plan requires it.

Ingredients
- 1 cup part-skim ricotta cheese
- 1/2 cup plain nonfat Greek yogurt
- 1/2 cup frozen mixed berries, thawed
- 1/2 teaspoon vanilla extract
- Approved sweetener to taste, optional
Directions

Blend the thawed berries until liquid, then press through a fine-mesh strainer. Discard all seeds and skins.

Blend the ricotta, Greek yogurt, vanilla, and optional approved sweetener until completely smooth.

Divide the ricotta mixture among four small cups.

Spoon one quarter of the seedless berry purée over each cup and swirl once.

Chill until ready to serve. Measure one portion, eat slowly, and keep the remaining cups refrigerated for up to 3 days.
