Ingredients

  • 4 slices reduced-fat cheddar cheese, halved
  • 1/2 medium cucumber, cut into 16 thin strips and patted dry

  • 1 teaspoon everything-bagel seasoning
  • 4 small leaf-lettuce pieces, optional

  • Avocado-Lime: thin avocado slices, lime juice, and cilantro
  • Dill Pickle: thin dill-pickle spears in place of cucumber

  • Everything Deluxe: additional everything-bagel seasoning with cucumber and lettuce

Directions

    Wash and dry the cucumber. Cut it into thin strips that will roll without tearing the turkey. Pat every vegetable, pickle, or other moist filling thoroughly dry.

    Lay the turkey slices flat on a clean work surface. If a slice is unusually small or torn, overlap it with another and adjust the final roll-up count rather than overfilling it.

    Spread each turkey slice with about 1 1/2 teaspoons softened light cream cheese. Place half a cheddar slice and two cucumber strips near one edge. Add a small lettuce piece or mustard if desired.

    For a flavor route, replace or add only the ingredients listed for that variation. Keep each filling modest enough that the turkey closes securely. The nutrition shown applies only to the base recipe; recalculate it for every substitution or addition.
