Parmesan Green Beans

These beans are steamed past crispness on purpose, then finished with a light coat of Parmesan. Green-bean skins and fibers make this a Regular Foods recipe even when tender; use only after your care team clears fibrous vegetables and dairy.

Ingredients

  • 1 pound fresh or frozen green beans, trimmed
  • 1 tablespoon olive oil
  • 1/4 cup finely grated Parmesan cheese
  • 1/4 teaspoon garlic powder
  • 1/4 cup water, plus more as needed
  • Black pepper, optional

Directions

    Cut the beans into 1-inch pieces and place them in a wide skillet with the water.

    Cover and simmer over medium-low heat for 12 to 16 minutes, stirring twice, until very tender and easily cut with the side of a fork. Add water by the tablespoon if the pan dries.

    Drain any remaining water. Add the olive oil and garlic powder and toss over low heat for 1 minute.

    Remove from heat and fold in the Parmesan.
