Mara's Tender Garlic Zucchini
Soft Garlic Zucchini
Peeling, seeding, and gentle simmering make zucchini genuinely soft rather than merely sautéed. Use only when your care team has cleared cooked vegetables, garlic, and dairy; every piece should mash easily with a fork.

Ingredients
- 4 small zucchini
- 1 teaspoon olive oil
- 1/3 cup unsalted vegetable or chicken broth
- 1/4 teaspoon garlic powder, or less to tolerance
- 2 tablespoons finely grated Parmesan cheese
- Pinch of black pepper, optional

Peel the zucchini. If the centers contain large seeds, quarter the zucchini lengthwise and scrape the seeds away.

Cut into small half-moons. Warm the oil in a skillet over medium-low heat and add the zucchini, broth, and garlic powder.

Cover and simmer for 12 to 16 minutes, stirring occasionally, until every piece is very soft and fork-mashable.

Remove the lid and cook only until excess liquid reduces; keep the zucchini moist. Fold in the Parmesan.

Divide into four small servings. Mash further if directed by your care team and eat slowly.
