Fine turkey crumbles stay cohesive in a mild tomato broth instead of drying out in the pan. Regular Foods / after recovery only; use tomato and spice when cleared by your care team. Use it three ways: spoon over cottage cheese, tuck into very tender zucchini, or add to a soft egg scramble.

Ingredients

  • 2 pounds 93% lean ground turkey
  • 1 cup no-salt-added tomato sauce
  • 1 cup no-salt-added chicken broth, divided
  • 2 teaspoons ground cumin
  • 1 teaspoon mild chili powder, or less to tolerance
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder

Directions

    Heat a wide nonstick skillet over medium. Add the turkey and 1/2 cup broth; break it into very fine crumbles while it cooks.

    Stir in the tomato sauce, cumin, chili powder, onion powder, garlic powder, and remaining broth. Simmer gently for 8 to 10 minutes, until the turkey reaches 165°F / 74°C and the mixture remains visibly moist.

    Divide into eight shallow covered containers. Refrigerate or freeze within 2 hours.

    Refrigerate for 3 to 4 days. For best quality, freeze individual portions for up to 3 months and thaw in the refrigerator.

    To reheat, add 1 tablespoon water or broth, cover, and heat to 165°F / 74°C, stirring midway. Measure one portion and stop at your care team's fullness signal.
