Asian Chicken Lettuce Wraps
Savory chicken, mushrooms, and crisp water chestnuts tuck into cool lettuce leaves for a bright, hand-held lunch. Bramble advises counting the leaves before Pip joins the expedition.

Ingredients
- 8 small butter-lettuce leaves
- 8 ounces lean ground chicken
- 1/2 cup finely chopped water chestnuts
- 1/2 cup finely chopped mushrooms
- 1/3 cup finely diced onion
- 1 teaspoon grated fresh ginger
- 1 clove garlic, minced
- 1 tablespoon reduced-sodium soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon toasted sesame oil
- 1 teaspoon chili-garlic sauce, optional
- 2 tablespoons thinly sliced cucumber
- 1 scallion, sliced

Wash and dry the lettuce leaves, then arrange them on a plate.

Warm a nonstick skillet over medium heat. Cook the onion and mushrooms until softened, 3 to 4 minutes.

Add the garlic and ginger and stir for 30 seconds. Add the chicken and cook, breaking it into small crumbles, until it reaches 165°F.

Fold in the water chestnuts, soy sauce, rice vinegar, sesame oil, and optional chili-garlic sauce. Cook for 1 to 2 minutes, just until the filling is glossy and hot.

Spoon the filling into the lettuce leaves and finish with cucumber and scallion.
