A light pineapple-lemon glaze gives tender salmon a sweet, smoky suggestion without becoming heavy. Mara serves it simply and lets the fish do the competent work.

Ingredients

  • 4 salmon fillets, 4 ounces each
  • 2 tablespoons pineapple juice
  • 1 tablespoon lemon juice
  • 1 teaspoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoons ground cumin
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon salt
  • Lemon wedges, optional

Directions

    Heat the oven to 400°F and lightly oil a small baking dish.

    Pat the salmon dry. Stir together the pineapple juice, lemon juice, and olive oil; brush half over the fish.

    Combine the paprika, cumin, cinnamon, garlic powder, and salt. Sprinkle evenly over the salmon.

    Bake until the thickest part flakes easily and reaches 145°F, usually 10 to 14 minutes. Brush with the remaining juice mixture during the final 2 minutes.

    Rest for 3 minutes before serving with lemon, if desired.
