Broccoli Egg and Cheese Bake
Soft broccoli, cottage cheese, eggs, and cheddar bake into a tender, crustless breakfast. Mara cuts it into tidy squares because mornings are unruly enough already.

Ingredients
- 6 large eggs
- 1 cup low-fat cottage cheese
- 1 cup finely chopped cooked broccoli
- 3/4 cup shredded reduced-fat cheddar, divided
- 2 tablespoons grated Parmesan
- 1/4 teaspoon garlic powder
- 1/8 teaspoon black pepper
- Cooking spray
Directions

Heat the oven to 350°F. Coat an 8-inch square baking dish with cooking spray.

Whisk the eggs until even. Stir in the cottage cheese, broccoli, 1/2 cup cheddar, Parmesan, garlic powder, and pepper.

Spread the mixture in the dish and scatter the remaining cheddar over the top.

Bake for 32 to 38 minutes, until the center is set and the edges are lightly golden.
