Sweet acorn squash cradles savory turkey, celery, onion, and melted cheese. Mara approves of the built-in bowl, though she still expects an actual plate beneath it.

Ingredients

  • 2 acorn squash, halved and seeded
  • 1 pound extra-lean ground turkey breast
  • 1 cup diced celery
  • 1 cup finely chopped onion
  • 1 cup fresh mushrooms, sliced
  • 1 teaspoon basil
  • 1 teaspoon oregano
  • 1 teaspoon garlic powder
  • 1/8 teaspoon salt
  • 1 pinch ground black pepper
  • 1 8-ounce can tomato sauce
  • 1 cup reduced-fat shredded cheddar cheese

Directions

    Heat the oven to 350 °F. Arrange squash cut side down in a glass dish.

    Continue cooking in microwave for 20 minutes on high, until almost tender. In a nonstick saucepan over medium heat, brown ground turkey.

    Stir in celery and onion; sauté until transparent. Next, stir in mushrooms; cook 2 to 3 minutes more.

    Stir in in tomato sauce and dry seasonings Divide mixture into quarters, spoon into the squash and cover. Continue cooking 15 minutes in the preheated 350 degrees oven.

    Next, uncover, sprinkle with cheese and put back in the oven until the cheese bubbles.
